No-Bake Summer Mango Yogurt 'Pie'


Summer! The time my oven gets more or less of a rest. Without my baking the family still wants dessert, so what's a mom to do? I've recently made up this fun recipe that's super easy, quick, and even the kids can make it! It's ridiculously simple, all you have to do really is assemble it. Simply mix a few ingredients and in fifteen to twenty minutes you've got a healthy dessert. It actually passed for breakfast around here once! 

This dessert is best made the day you will eat it as it's not as good when the puffed millet gets soggy under the yogurt. It's made to be served by the spoon and eaten with one, it's not going to be firm - it's just the consistency of Greek yogurt. The gelatin is optional and is more so there just for the nutritional benefits rather than to give the pie any shape. The puffed millet is a great base because it saves you time in making a crust and it is something you can keep in the pantry to always have on hand. There is also a ton of room to play around with this adding fruit or different sweeteners according to your preferences. 




15-20 minutes
This recipe serves 6-8 people for dessert

Ingredients:
Bottom layer:
3 cups puffed millet (I buy this one)
2 tbsp grassfed butter or ghee, softened
4 tbsp sunflower seed butter (may be substituted with peanut or almond butter)
4 tbsp honey
Top layer:
3- 16 oz tubs Stonyfield Organic Plain Greek Yogurt
3 tbsp honey
1/2 cup maple syrup (we like this one)
2 tsp gelatin (optional)
1 1/2 cups Earthbound Farm Organic frozen mango chunks, defrosted
2 tsp turbinado sugar (optional)



Directions: 

1. In a medium sauce pan, melt the butter or ghee, add sunflower seed butter and honey, heat on medium for two minutes while stirring. 
2. Add puffed millet and mix with the honey/butter mixture. Place mixture into pie pan and flatten/spread/press it down to make a 'crust'. 
3. In a bowl, mix the yogurt with honey, maple syrup, and gelatin (if using). 
4. Pour yogurt mixture on top of the pie 'crust', sprinkle with turbinado. 
5. Decorate with mango chunks and serve!
