Simple Tomato Mozzarella Appetizer



Having company over? Looking for a healthy lunchbox snack? Too hot to cook? Perhaps you just don't feel like cooking? This simple appetizer is easy enough even for a toddler to assemble. Three ingredients and you're good to go, it's like nature's candy!

It's certainly not a meal, but great as an alternative to a salad, yummy drizzled with some olive oil and sprinkled with sea salt. It's fun for toddlers and kids to make and eat, you just have them help themselves. We prefer spinach because basil has too much of a kick for my toddler. For some flavor and balance you could sandwich a tiny basil leaf piece in between the tomato and the mozzarella in addition to the spinach leaf around it. 

Ingredients:

Grape or Cherry Tomatoes
Mozzarella Cheese
Spinach or Basil Leaves
Toothpicks for assembly

Directions: 

1. Please tell me you don't actually need directions for this!
2. Recipes that don't need directions are #1 in my book!
3. Go make some!

If you're expecting company, stock up on the ingredients, you'll need a lot! It's light and healthy, sure doesn't feel like you've stuffed yourself.

  2. That's pretty cool, we are into raw food at this point and this is a good idea..i will just have to figure out about the dairy part, i dont eat dairy but the kids do somewhat.... thanks for sharing

    1. You could also make your own dressing with a bit of apple cider vinegar, EVOO, salt, and spices :)

  7. It actually can be a meal! I just had a caprese sandwich for lunch, which is pretty much that on bread. :) Very popular in the midwest this time of year!

  8. These look delicious! I made something similar that also had olives and was on skewers ... if you ever wanted to expand it a little. I've seen people add cheese tortellini and salami as well ... I am partial to the simplicity of yours though! :)

  12. These look absolutely fabulous. My sister is getting married Saturday, so we are hosting a luncheon that day for the families and the bridal party. I may be making these for them! I've been trying to think of a good, easy, finger-food snack, and this seems perfect!

I love this recipe, i actually love the caprese salad which has basil, lettuce and mozzarella cheese so it's very close to this recipe and my favorite things that are in it are the basil and mozzarella :) Thanks for this great recipe! I'll try it, it's healthy, looks delicious and a great light dinner or lunch idea :)
