Lazy Chicken Recipe



We eat chicken more than any other meat. While I love to try new recipes with chicken, this is my 'lazy' (read: easy) recipe that works when I need to make lunch or dinner in a snap and haven't had time for marinating. It's simple and the key is garlic and not pricking the chicken with a fork (makes it juicier). There is really nothing to it! Having a good non-toxic, non-stick skillet (love my Copenhagen GreenPan) really makes it crispy without a sticky mess.

*NOTE* I no longer use or recommend frying in olive oil at high heat as it change's the oil's composition, and not in a good way. Instead I use either coconut oil, tallow, or a little butter - which gives it a nice crispy coat. I don't recommend butter in a stainless pan though, but it works in an Eco non-stick with diamond coating. 

Ingredients:

1 package chicken breast
4 cloves garlic
2 tablespoons olive oil
salt, pepper, spices to taste


Directions: 

1. Slice garlic and saute in olive oil in a frying pan.
2. When the pan is heated through, place chicken breast in pan and brown on high, turning frequently. Add salt, pepper, and seasoning on all sides. Make sure it is golden brown before covering and let it cook on medium for about 20 - 25 minutes.
3. Cook uncovered for another 5- 10 minutes until golden to your liking and you are done! 

Delicious as is with a side of your choice, or cut up to place in a wrap, sandwich, as a pizza topping. I like to start it and while it cooks, I make a salad and/or rice dish - so in a short 30 - 35 minutes I can make a quick healthy meal without feeling like I toiled in the kitchen.

  1. As much as we eat so much chicken with type A blood type and me with type B, for my husband's diet sake we are going more vegetarian. So yeah more grain and veggies in our diet, as i found out chicken is very acidic compare to turkey.
    I agree those simple chicken recipes sometimes the best because even baking whole chicken can be used for different recipe the next day with already less hassle to cook.

    1. Who told you that blood type had anything at all with making a diet choice ????? I'm a doctor and have never heard of this before !!!

    2. Dear Anonymous, if you really are a doctor, I am sure you are aware that doctors do not and cannot possibly know EVERYTHING. In fact, doctors are not nearly taught enough about nutrition. There is a theory about eating certain food for your blood type, I do not follow it, but some people do, so please respect that. Thank you for your comment!

    Chicken has always been, is still, and probably always will be my favorite type of meat. I love getting creative with different types of chicken. I'd love to try this recipe because it sounds really easy but still great!!

I am looking for a recipe for lazy chicken that I lost many years ago...It was in a local cook book put out by the fire dept....All I can remember was it consisted of chicken breast with bone and cooked in oven in a sauce....the sauce consisted of onion soup mix, ketchup,a little bit of brown sugar, water and the remaining ingredients I cannot remember...I believe it also had a 1/4 tsp of vinegar as well....If anyone knows this receipe could you pls post it for me....

  7. sounds good to me....another good one is to leave breast in italian dressing or ranch dressing and then dip chicken into bread crumbs then just spray pan with Pam put cutlets in and spray cutlets then bake

  12. I LOVE how easy and simple this is! My husband's main food love is chicken so I'm always trying to find new recipes. This is definitely going to be on my list of things to make him! I love how it looks and sounds so good, but there are only about 4 ingredients!

  13. I make chicken like this all the time! It is delicious, and you can do so much with the leftovers the next day, like chicken salad, or toss it in bbq sauce heat it and put it on a roll or in a pita!

    Personally, since I'm weird and don't care for the taste of olive oil, I usually use butter or coconut oil in place of the olive oil and chicken thigh or drumstick in place of the lean breast meat.
